A simple chicken and Greek yoghurt bowl has been recommended by Florida-based gastroenterologist Dr Joseph Salhab as an easy meal option combining protein, fibre and other nutrient-rich ingredients. Salhab, who focuses on digestive, liver, pancreatic and nutritional health, shared the recipe as a convenient meal-preparation option. The bowl brings together cooked chicken, Greek yoghurt, chickpeas, edamame, avocado and vegetables, making it suitable for those looking for a filling meal without spending long hours in the kitchen.
The recipe begins with a combination of cucumber, finely diced red onion, low-fat Greek yoghurt, minced garlic and lemon juice. Salt, black pepper and one to two teaspoons of olive oil are added to provide seasoning and flavour. The ingredients can be mixed in a large bowl to create the yoghurt-based dressing before the remaining components are added. The combination provides a creamy base while keeping the preparation relatively simple and requiring no elaborate cooking techniques.
The next step involves adding 150 grams of cooked chicken breast, half a cup of cooked chickpeas and half a cup of shelled edamame to the yoghurt mixture. Half an avocado, cut into small pieces, is then added to the bowl. Kalamata olives can also be included for additional flavour, although they are optional. Once everything has been added, the bowl can be covered and shaken gently so that the ingredients are evenly coated, or the mixture can simply be tossed together with a spoon.

The actual protein and fibre content can vary according to the amount and type of chicken, yoghurt, chickpeas, edamame and other ingredients used. Portion size is therefore important when assessing the nutritional content of the meal.
