With mango season in full swing, chefs are encouraging home cooks to experiment beyond traditional juices and milkshakes by trying creative, restaurant-style desserts that highlight the fruit’s natural sweetness. Two standout recipes gaining attention this season include Alphonso cheesecake and mango tiramisu, both offering a rich fusion of tropical flavours with classic dessert techniques.
The Alphonso cheesecake, shared by Chef Ganesh Dumbare of Novotel Mumbai Juhu Beach, is a baked dessert that combines creamy cheese with the distinct sweetness of Alphonso mangoes. The base is made using cream cheese, fresh cream, icing sugar, eggs, corn flour, and vanilla essence, blended into a smooth batter. Fresh Alphonso purée and chopped mango pieces are folded in before baking, giving the dessert a natural fruit-forward flavour.
Once prepared, the cheesecake is baked at 150°C for around 40 minutes until set. The cream is prepared by blending mascarpone cheese, whipped cream, condensed milk, and vanilla extract, which is then layered with mango purée and soaked biscuits. The dessert is assembled in multiple layers to achieve a balanced texture of softness and creaminess.Once assembled, the tiramisu is refrigerated for at least six hours, preferably overnight, allowing the flavours to meld together.
