Independence Day 2026 is approaching, and a festive home-cooked meal can add an extra touch to celebrations with family and friends. For those looking to bring a patriotic theme to the dining table, chefs from Priya Living, Hyderabad, have shared a selection of tricolour-inspired recipes. The menu includes a tricolour idli platter, a festive biryani and patriotic paneer tikka, offering a mix of traditional Indian flavours and colourful presentation.
The tricolour idli platter, shared by Chef de Partie M Sakthivel, features soft, fermented South Indian rice-and-lentil idlis. To prepare the batter, rice and urad dal are washed and soaked separately, with fenugreek seeds added to the rice. The ingredients are then ground separately before being combined into a thick, pourable batter. After fermentation for around 8–12 hours, the batter is steamed in greased idli moulds for about 10–12 minutes. The idlis can then be arranged in different colours to create a festive platter.
Another option is the Pride of India Biryani, shared by Chef de Partie Manower Alam. The recipe combines basmati rice with vegetables, yoghurt, whole spices, herbs, saffron and fried onions. The vegetables are first marinated with yoghurt, ginger-garlic paste, spices, mint and coriander, while the rice is partially cooked separately with whole spices. The two are then layered and finished with fried onions, herbs, saffron milk and ghee before being covered and cooked together.

For a snack or starter, patriotic paneer tikka offers a colourful combination of paneer, onion and capsicum. Paneer cubes are coated in a marinade made with hung curd, ginger-garlic paste, Kashmiri chilli powder, turmeric, garam masala, chaat masala, lemon juice and mustard oil. After resting for 30–60 minutes, the paneer and vegetables are threaded onto skewers and grilled until lightly charred. The tikka can be finished with butter and served with mint chutney and lemon wedges.
