Odisha Chief Minister Mohan Charan Majhi and Leader of Opposition Naveen Patnaik joined citizens in celebrating ‘Pakhala Divas’ on Thursday, honoring the state’s beloved dish, Pakhala. This fermented rice delicacy, a cornerstone of Odia cuisine, was lauded as a symbol of cultural identity and heritage by leaders and locals alike.
Rooted in Puri’s Jagannath Temple traditions, Pakhala is made by soaking leftover rice in water in an earthen pot, allowing it to ferment, explained researcher Bhaskar Mishra. Ideal for summer, it cools the body and aids digestion. Varieties include Basi (fermented), Saja (fresh), Dahi (curd-based), Sugandhi (fragrant), and Meetha (sweet), each paired with sides like fried potatoes, brinjal, greens, or fish fry.
CM Majhi, an avowed fan, took to X, saying, “Pakhala is a symbol of Odia culture and linked to the state’s ‘asmita’ (pride). It is my favourite... an integral part of Odia lifestyle. Heartiest greetings on ‘Pakhala Divas’.” BJD chief Patnaik echoed the sentiment, posting, “Pakhala has a unique place in Odia tradition. I greet all on #PakhalaDivas.”
Once a humble meal for the underprivileged, Pakhala has transcended its origins, now gracing upscale menus and five-star hotels with curated ‘Pakhala Thalis.’ The day, marked annually on March 20, reflects Odisha’s embrace of its culinary legacy, uniting people across social strata in a shared celebration of flavor and tradition.
