National Caesar Salad Day, observed annually on July 4, celebrates one of the world's most iconic salads, created by Italian-American restaurateur Caesar Cardini. To mark the occasion, chefs from Goa's Deltin properties have shared two easy-to-make Caesar salad recipes that combine classic ingredients with simple preparation, making them ideal for a healthy meal at home.
The first recipe, titled "Beyond the Bowl," has been shared by Sitaram Jalvi, Sous Chef at Deltin Royal, Goa. It features crisp romaine lettuce, grilled chicken, garlic croutons and shaved Parmesan cheese, all coated in a rich homemade Caesar dressing. The dressing is prepared using egg yolk, Dijon mustard, garlic, anchovies, Worcestershire sauce, fresh lemon juice, Parmesan cheese and extra virgin olive oil, seasoned with sea salt and freshly cracked black pepper. To assemble the salad, the romaine lettuce is washed, chilled and hand-torn before being tossed with the dressing. Grilled chicken and garlic croutons are then added, followed by generous Parmesan shavings, cracked black pepper and a lemon wedge for a fresh finish.
The second recipe, Chicken Caesar Salad, has been shared by Pritesh Narvekar, Chef De Partie at Deltin Suites, Goa. Described as a classic dish, it combines fresh vegetables, creamy Caesar dressing and perfectly grilled chicken to create a wholesome meal. Suitable as either a starter or a main course, the recipe offers a balanced combination of protein, greens and crunchy textures while remaining simple enough for home cooks to prepare.
