Celebrity chef Sanjeev Kapoor has shared a unique summer variation of the popular butter chicken recipe, combining the rich flavours of the classic dish with the sweetness of ripe mangoes. The chef described the Signature Mango Butter Chicken as one of his personal favourites and encouraged food enthusiasts to try the recipe during the ongoing mango season.
Kapoor posted the recipe on Instagram on June 4, suggesting that those familiar with traditional butter chicken experiment with a mango-infused version. In the post, he wrote that while people may have enjoyed butter chicken many times before, the mango season offers an ideal opportunity to try a different take on the dish. He also revealed that the recipe has remained a favourite of his for years.
The recipe combines smoky reshmi chicken tikka pieces with a creamy makhani-style gravy prepared using tomatoes, onions, aromatic whole spices, cashew nuts and melon seeds. The distinctive element is the addition of ripe Alphonso mango puree, which lends natural sweetness and a fruity flavour profile while complementing the richness of the butter-based sauce.

According to the recipe, the gravy is prepared by sautéing whole spices, garlic, ginger, onions and tomatoes before cooking them with seasonings, nuts and seeds. The mixture is then blended into a smooth paste. Separately, ripe mangoes are peeled, deseeded and pureed, with a few pieces reserved for garnish or additional texture.
The final stage involves cooking the tomato-based gravy with butter, garam masala and dried fenugreek leaves before adding the mango puree. Reshmi chicken tikka pieces, fresh cream and additional butter are then mixed into the sauce, creating a rich and creamy dish that balances savoury, smoky and sweet flavours. The recipe is typically served hot with naan and garnished with fresh mint leaves.
