Food Regulator Seals Kalyan Bakery For Defying Wood-Fired Oven Ban

A popular bakery in Kalyan has been sealed by food safety authorities following a complaint over the use of a wood-fired furnace to bake bread. The action has brought renewed attention to restrictions on traditional wood- and coal-fired ovens used by bakeries across Maharashtra. Officials took action at the premises after finding that the bakery was continuing to use a furnace that falls under the prohibited category.

The action follows directions issued earlier by the Bombay High Court concerning the use of coal and wood as fuel in bakery ovens. The court had directed bakeries across Maharashtra to move away from such fuels and adopt cleaner alternatives. Options including liquefied petroleum gas (LPG), piped gas and electric ovens have been suggested as alternatives intended to reduce pollution and improve conditions around bakery operations.

The restrictions have affected several bakery businesses that have traditionally relied on wood-fired furnaces for producing bread and other baked products. Bakery owners have raised concerns about the cost involved in replacing existing equipment and shifting to alternative fuel systems. However, authorities have continued to emphasise compliance with the directions and the need to reduce emissions associated with conventional wood- and coal-fired ovens.
