Mango Coconut Laddu Recipe By Chef Kunal Perfect For Summer Cravings

Chef Kunal shares mango coconut laddu recipe for summer

A refreshing summer dessert recipe combining mango and coconut has gained attention after chef Kunal Kapur shared his easy mango coconut laddu preparation, designed to help satisfy sweet cravings during the hot season while keeping the dessert light and naturally flavorful.

The recipe is especially popular in summer months when ripe mangoes are widely available and people prefer cooling, no-bake or minimal-cooking sweets over heavier traditional desserts. The combination of mango and coconut offers a balance of tropical sweetness and rich texture, making it both indulgent and refreshing.

To begin the preparation, fresh ripe mango pulp is the key ingredient. It is combined with desiccated coconut and condensed milk, along with a hint of cardamom powder for aroma. The mixture is gently cooked in a pan over low to medium heat to reduce excess moisture and help it thicken into a cohesive base.

As the mixture cooks, continuous stirring is important to prevent sticking and ensure even consistency. The mango pulp gradually blends with the coconut and condensed milk, forming a thick, sticky mixture that begins to leave the sides of the pan. This stage is crucial for achieving the right texture for shaping laddus later.

Once the mixture reaches a soft dough-like consistency, it is removed from heat and allowed to cool slightly. At this point, it becomes easier to handle and shape. The addition of cardamom enhances the flavour profile, adding a subtle aromatic note that complements the sweetness of mango.

When the mixture is warm but not hot, small portions are taken and rolled into round laddus using greased hands. A light coating of desiccated coconut can be added on the outside for extra texture and visual appeal. This step also helps prevent sticking and gives the laddus a more traditional finish.

The prepared laddus can be refrigerated for a few hours before serving, allowing them to firm up further and develop a more structured bite. Once set, they are ready to be enjoyed as a quick dessert or festive sweet.Simple, seasonal, and requiring minimal ingredients, mango coconut laddus offer a practical homemade alternative to store-bought sweets. The recipe reflects a growing trend toward easy, fruit-based desserts that are both flavorful and suitable for warm weather indulgence.
