UNESCO Lists Neapolitan Pizza-Making as Intangible Cultural Heritage of Humanity
UNESCO recognises Neapolitan pizza-making as cultural heritage, preserving Naples’ traditional culinary craft.
Neapolitan pizza, one of the world’s most iconic culinary traditions, has been formally recognised by the UNESCO as part of the Intangible Cultural Heritage of Humanity, highlighting its deep cultural roots in Naples, Italy, and its enduring significance beyond just a popular food item.
The recognition, granted in 2017, celebrates the “Art of the Neapolitan pizzaiuolo”—the skilled pizza makers whose techniques, rituals, and cultural practices have been passed down through generations. UNESCO’s designation focuses not only on the final dish but also on the living tradition of pizza-making itself, preserving the cultural identity tied to it.
At the heart of this heritage is the work of the pizzaiuolo, the traditional Neapolitan pizza maker, whose craft involves precise hand movements, controlled dough preparation, and time-honoured methods. These skills are typically learned through apprenticeship, ensuring that knowledge is transmitted directly from master to student within local communities.

Authentic Neapolitan pizza is defined by strict traditional standards. The dough is made using only flour, water, salt, and yeast, and is shaped entirely by hand without the use of rolling pins to maintain its airy texture. It is then cooked in a wood-fired oven at extremely high temperatures—around 400 to 500°C—for just 60 to 90 seconds, producing its signature soft, elastic crust with light charring.
Despite its simplicity, the tradition places strong emphasis on quality ingredients and restraint. The two classic varieties—Margherita, topped with tomato, mozzarella, and basil, and Marinara, made with tomato, garlic, oregano, and olive oil—reflect the philosophy that excellence comes from minimalism rather than excess.
Today, Neapolitan pizza stands as a global symbol of culinary heritage, even as pizza has been adapted and transformed worldwide. UNESCO’s recognition ensures that the cultural practices of Naples’ pizza makers continue to be preserved, safeguarding not just a recipe, but a centuries-old way of life rooted in community, craftsmanship, and tradition.
