Butterfly Pea Flowers Give Kunal Kapur's Classic Lemonade A Naturally Stunning Makeover

Kunal Kapur adds butterfly pea flowers to lemonade

Chef Kunal Kapur has given the familiar summer lemonade a colourful makeover with a refreshing drink made using butterfly pea flowers, lemon juice and chia seeds. The chef recently shared his blue pea lemonade recipe on Instagram, describing it as a “fun twist” on the classic beverage. The drink stands out not only for its refreshing combination of flavours but also for its naturally vibrant blue colour. In his August 9 Instagram post, Kapur introduced the beverage as a simple alternative to traditional lemonade. Rather than relying on artificial food colouring to create its striking appearance, the drink gets its colour naturally from butterfly pea flowers.

The flowers have become increasingly popular in drinks and desserts because of their distinctive deep blue hue and their ability to produce visually dramatic changes when combined with acidic ingredients. Lemon juice plays an important role in the drink beyond adding its familiar citrus flavour. Butterfly pea flowers contain natural pigments called anthocyanins, which are sensitive to changes in acidity. When an acidic ingredient such as lemon juice is added, the colour of the drink can shift from blue towards purple or pink depending on the concentration and acidity. This natural colour-changing effect makes butterfly pea lemonade particularly appealing as a visually striking summer beverage.

Kapur's recipe also includes chia seeds, adding another texture to the drink. Once soaked, chia seeds develop a gel-like coating and are commonly incorporated into beverages, puddings and other recipes. Their addition gives the lemonade a more distinctive appearance while providing a familiar ingredient often associated with health-conscious recipes. Combined with the floral element of butterfly pea and the sharpness of lemon, the drink offers a variation on conventional lemonade. The recipe also demonstrates how a few simple ingredients can transform a familiar beverage without requiring complicated preparation.

Traditional lemonade generally relies on a straightforward combination of lemon juice, water and a sweetener, but adding butterfly pea flowers introduces a completely different visual element. The result is a drink that can work as a refreshing summer option as well as an eye-catching beverage for gatherings and special occasions. Kapur described his creation as “simple to make, naturally eye-catching, and incredibly refreshing”, highlighting its appeal as an easy drink for warm weather. The naturally derived colour is likely to be one of its biggest attractions, particularly for people looking for alternatives to artificially coloured beverages.

The drink also fits into the growing interest in visually distinctive recipes that combine familiar flavours with unusual ingredients. Blue pea lemonade is therefore more than a colourful variation on a summer classic. The combination of butterfly pea flowers and lemon creates a naturally dramatic appearance, while chia seeds add texture and make the drink visually distinctive. Kapur's recipe offers a straightforward way to experiment with traditional lemonade while using an ingredient known for its natural colour-changing properties, making it an appealing option for anyone looking to serve something different during the summer.
